'Tis the weekend, and we celebrate
the closing of another successful week with a picnic. With hopes
of beautiful weather and titillating conversation, we've planned
our menu and packed our basket.
Cold
Grilled Stuffed Chicken Breast "Old Santa Fe"
Served on a bed of fresh sliced tomatoes with cilantro garnish
Sweet Corn Salad
Sweet corn kernels cooked and chilled, in a lime juice, olive (or
corn) oil, fresh cilantro, and cumin dressing
Toasted Corn Tortillas
Fresh Apricots
Quartered and pitted, serve in a wine glass with champagne or sweetened
cream poured over them.
Beverages
Mineral Water
Serve chilled, but not over ice
California Zinfandel or Chardonnay
The consummate picnic wines
Wheat Beer or Pale Ale
German wheat beer is great on a summer day, but American micro-beers
are worth a try.
