Wild rice is not rice at all,
but the seed of a tall aquatic grass. There are varieties of wild
rice found in North America and Asia - but the North American varieties
are the most familiar to Americans. While it once truly was wild,
it is now cultivated in Northern Minnesota (which produces two-thirds
of the world crop), California, and Central Canada.
Easily recognizable by its brown husk,
wild rice has a flavor and texture quite different from ordinary
white rice. Earthy and delightfully different, this hearty grain
goes well with fowl and game-bird.
Try it with our Turkey
